Athlete profile: I grew up in Raleigh, North Carolina but I now live in Salford in Manchester with my family. I’ve been competing in taekwondo for eight years and have won multiple national medals. I train five days a week, for three to four hours a day – it is hard work but I love it! 
 
Biggest achievement: My proudest moment was when I won a gold medal in the Taekwondo Grand Prix in South Carolina in 2020. 
 
Fun fact: I was a counsellor in training at my childhood summer camp. I learned how to be a lifeguard, was taught first aid, and discovered how to help kids have fun and be their true selves! 

How do you Eat Fresh?

1. What does healthy eating mean to you?

To me, healthy eating means eating things that make me feel good and so that I can perform well. It’s also all about balance and eating things in moderation.
 

2. What fresh, healthy foods do you need to fuel your day and why is this important for your sport and daily life?

I start my mornings off with porridge and a banana. This ensures that I'm well fuelled for my morning training, all the way through to lunch. At lunch, I like to have a protein bar to help me gain easy energy for the next session. Finally, I end my day with a high protein and vegetable dinner, to help my muscles grow and stay healthy overnight, and to fuel me into the next day.
 

3. What fresh, healthy dish do you enjoy making the most and why?

My favourite dish to eat is a steak and rice stir fry dinner. I find that the more I enjoy eating the dish, the more I enjoy making it. This really helps me eat better meals to fuel my training and make good food choices.
 

4. What can make eating well and cooking challenging for you?

I’m still learning how to cook and I don't have too much time on my hands so it is challenging to learn new recipes or skills. I work really well with quick and easy at home recipes.
 

5. What helps make eating well and cooking easier for you?

I make time in my schedule to plan and prepare my meals for the week in one go. This helps me to save time as I don’t have to cook every day, but I know I will still be able to eat a fresh, healthy meal.
 

6. What does healthy, sustainable food mean to you?

I try to keep my meals as healthy and sustainable as possible, but opting for fresh, organic foods that make me feel the strongest I can be.
 

7. What are your ‘super six’ fruits and vegetables?

Strawberries, bananas, peppers, green beans, cucumbers, asparagus.
