Athlete profile: I am a sprint kayaker. It is an incredibly fast and exciting sport, but it also really demanding on athletes like me! I have been in the sport for nine years and I train two to three times a day, either on the water or in the gym.
Biggest Achievement: I have won National Champion many times and am now aiming to qualify for the Olympic Games.
Fun fact: My dad comes from Ecuador, and I speak Spanish.
Healthy eating means having a well-balanced diet that is easy to maintain. Competing in a sprint kayak takes a lot of muscle power and skill so I need to make sure I am fuelling by body well to succeed.
My go to healthy snack is honey roasted peanuts – they are full of long-lasting energy to get through my intense training schedule, and they taste nice, which is also important!
My favourite dish to make is jerk chicken with rice and corn on the cob. I enjoy making it because it tastes delicious and its simple to make after a long day in training. All I have to do is prep the ingredients and put in all the oven. Then I can go and get changed and by the time I come back, it’s all done!
Being at University, I have limited facilities for cooking and a very busy schedule. The biggest challenge is fitting in shopping and time to cook around my lectures and training.
To save time, I batch cook my main meals and always have healthy snacks readily available. This makes it so much easier to balance my time and still ensure I am eating fresh, healthy food.
To me, food is healthy and sustainable if it doesn’t go off too quickly and is locally sourced. I really appreciate that Aldi always tries to buy British and support local farmers.
