Get Cooking – Let’s Cook! with Chris Skelley

As part of our Let's Cook! resources, we asked three Team GB and ParalympicsGB athletes to cook us their favourite meal and explain what they love about cooking.
 
Chris Skelley is a ParalympicsGB judo athlete. He won his first Paralympic gold medal at the Tokyo 2020 Paralympic Games, beating USA’s Ben Goodrich in the final. For Chris, cooking is a great way to relax and unwind affter a hard day of training. Due to his visual imparement, Chris has developed different techniques to ensure that he can safely cook fresh, healthy meals at home.
 
 

Chris Skelley’s mid-week fajitas 

Packed with protein and vegetables this is the perfect dish to make after a long day at school or in training.

Ingredients

  • 300g chicken breast
  • 100g chorizo 
  • 1 green pepper 
  • 1 red onion 
  • 1 packet fajita seasoning mix  
  • 2 wraps per person 

Method

  1. Chop the chorizo and chicken into evenly sized cubes and the pepper and onion into thin strips. Ask an adult to supervise or help when using a sharp knife. 
  2. Add a drizzle of oil to a pan and add the chicken. Allow to cook on a medium heat for 5 minutes until cooked through.  
  3. Add the chorizo and cook for a further 2 minutes before adding onion and pepper. 
  4. Once the vegetables are softened, add the fajita seasoning mix and stir well.  
  5. Put the wraps on a plate and microwave for 1 minute.  
  6. Serve 2 wraps per person adding sour cream, salsa and guacamole to taste. 

Top tip: When cutting the chicken and vegetables with a sharp knife, hold the item in place with a fork rather than with your hand. This will keep the item steady and protect your fingers, too.
